I'm hosting a dinner party for 5 for New Years Eve. Here is my menu so far:
Appetizers: smoked salmon and and cream cheese (Neufchatel) on rye crisps and cream cheese and sundried tomato on rye crisps
Salad: Caesar Salad (light dressing) with roasted red peppers
Main dish: Mushroom and artichoke stuffed chicken (low-fat filling, skinless chicken breasts)
blanched green beans and pearl onions
roasted new potatoes with garlic and rosemary
Dessert: Tiramusu (godly high in calories, but oh-so worth it!)
White wine with dinner, wassail and coffee served with dessert.
Overall not the lightest meal ever, but much better than it could be! :) I'm open to suggestions, if you have any!
